Understanding Flavor in Specialty Coffee

Before joining a cupping, it helps to understand how we perceive flavor.

In specialty coffee, flavor combines basic tastes with aroma. The four primary tastes are:

  • Fragrance – the smell of dry, ground coffee

How a Professional Cupping Works

1. Preparing the Coffees

Each coffee is weighed and ground separately to prevent cross-contamination. The grounds are placed into cupping bowls and arranged systematically on the table.

2. Assessing Dry Fragrance

Participants smell the dry grounds and note their impressions.

3. Brewing

Hot water is poured evenly across all bowls. The coffee steeps for several minutes.

4. Evaluating Wet Aroma & Breaking the Crust

Around the 4-minute mark, the crust (the top layer of grounds) is gently broken with a spoon. This releases intense aromas. The surface foam is skimmed off to prepare for tasting.

5. Tasting & Scoring

At approximately 10 minutes, tasting begins. Coffee is slurped, not sipped. Slurping spreads the liquid across the palate, allowing full sensory evaluation.

Coffees are scored on a scale from 6 to 9+:

  • 6 – Good

  • 7 – Very Good

  • 8 – Excellent

  • 9+ – Outstanding

Professional cupping sessions are conducted quietly to allow full concentration. Spoons are rinsed between bowls for hygiene and accuracy.
